TILAPIA BRAISED IN TOMATO AND ONION SAUCE

This Tilapia dish would be ideal for a weeknight dinner. Since Tilapia fillets are thin, it takes only few minutes to cook and the resulting dish is very flavorful. I have opted for fresh tomatoes but you could use canned diced tomatoes. Gather all the ingredients and do all the cutting and chopping before you start cooking because the dish will come together very quickly. Try to check the doneness of the fish fillet using a thermometer rather than relying on time. This ensures a perfectly cooked fish every time. You can use any kind of fish for this recipe but cooking time is going to vary based on its thickness. Crushed whole coriander seeds are recommended but you could use store bought coriander powder also.

Ingredients and Instructions
  • 3 tbsp. oil
  • 1 cup tomato,chopped
  • 0.5 cup white onions, chopped
  • 1 tsp. ginger, chopped
  • 6 cloves of garlic, thinly sliced
  • 1 tsp. salt
  • 1 tbsp. jalapeno, chopped
  • 1tbsp. curry leaves, thinly sliced

Heat oil in a 10 inch skillet on medium high. Add onion, curry leaves, jalapeno and salt to the pan and sauté until onions turn golden brown. Stir in garlic and ginger and cook for another minute.

  • 0.5 tsp. turmeric
  • 0.75 tsp. paprika
  • 1 tbsp. cracked coriander seeds or powder
  • 0.5 tsp. cumin powder

Combine turmeric, paprika, cumin and coriander and add it to the onion mix. Cook until fragrant. Stir in the tomato and cook until oil separates. 

  • 2 (6oz) tilapia fish fillets
  • Salt and pepper

Place tilapia fillets on a thin layer of tomato onion mixture, sprinkle salt and pepper and spoon the rest of the mixture on top.

Cover skillet with the lid and simmer at medium heat for about 7 minutes. Temperature on the thickest part of the fillet should be around 145 degrees F. At this point, the fish will turn white and begins to flake easily with a fork. Transfer fillets on to a plate.  If the sauce looks watery, continue to simmer until the tomato onion mixture is thickened. If needed, season with salt and pepper. Spoon the sauce over the tilapia fillets and enjoy.
